In large bowl whisk soy milk, yogurt,
applesauce, oil, vanilla and sugar. Sift in
flour cornstarch, baking soda, salt and mix
well.

Fill cupcake liners three-quarters full.

bake 22 - 24 minutes until a knife or
toothpick inserted through the center comes
out clean.
