Cheesecake Recipe Ingredients:

18 Gingersnaps

2 cups Light Ricotta Cheese

1 cup canned Pumpkin Puree

2 Eggs
-
1/3 cup Brown Sugar

1 teaspoon Cinnamon
-
1/2 teaspoon Ginger
-
1/8 teaspoon Cloves
-
1 teaspoon Vanilla Extract

sliced Almonds - for garnish

Cheesecake Recipe
Cooking Instructions:

Preheat the oven to 325 degrees.

Line 18 muffin pan cups with foil liners and
press a gingersnap into the bottom of each
one.

In a food blender, blend ricotta until
smooth and creamy the add in remaining
ingredients except almonds, blend until well
combined. Spoon into muffin cups.

Bake for 25 minutes or until lightly set.
-
Allow to cool on a wire rack to room
temperature then remove cheesecakes from pan
and chill.

Just before serving decorate tops with
sliced almonds.
