Healthy Pumpkin Cheesecake Recipe Ingredients:- 18 Gingersnaps
- 2 cups Light Ricotta Cheese
- 1 cup canned Pumpkin Puree
- 2 Eggs
- 1/3 cup Brown Sugar
- 1 teaspoon Cinnamon
- 1/2 teaspoon Ginger
- 1/8 teaspoon Cloves
- 1 teaspoon Vanilla Extract
- sliced Almonds - for garnish

Healthy Pumpkin Cheesecake Recipe Cooking Instructions:- Preheat the oven to 325 degrees.
- Line 18 muffin pan cups with foil liners and press a gingersnap into the bottom of each one.
- In a food blender, blend ricotta until smooth and creamy the add in remaining ingredients except almonds, blend until well combined. Spoon into muffin cups.
- Bake for 25 minutes or until lightly set.
- Allow to cool on a wire rack to room temperature then remove cheesecakes from pan and chill.
- Just before serving decorate tops with sliced almonds.
