1/3 cup Low Fat Buttermilk

1 Eggs

2 Egg Whites

1/4cup Canola Oil

2 cups White All Purpose Flour

2 teaspoons Low Sodium Baking Powder

1 teaspoon Baking Soda

1/2 teaspoon Salt

1½ teaspoons Ground Cinnamon

1/4 teaspoon Ground Nutmeg

Cooking Instructions:

Preheat oven to 350 degrees F.

With cooking spray coat a 9-inch loaf pan.

In a medium bowl, combine the pumpkin,
buttermilk, egg, egg whites, oil and mix
well and set aside.

In a large bowl, sift the remaining
ingredients together.

Make a well in the center of the dry
ingredients. Add pumpkin mixture all at
once. Mix very well, pour batter into a loaf
pan.

Bake 50-60 minutes or until toothpick
inserted in center comes out clean.
