Healthy Potato Soup Recipe Ingredients:

4 Large Baking Potatoes

2/3 cup All Purpose Flour

6 cups 2% Reduced Fat Milk

3/4 cup Reduced Fat Cheddar Cheese - divided

Salt - to taste
-
Fresh
Cracked Pepper - to taste

1 cup Non Fat Sour Cream
-
1/2 cup Green Onions - chopped

Healthy Potato Soup Recipe
Cooking Instructions:

Preheat the oven to 400 degrees.

Pierce all the potatoes with a fork all
over.
-
bake at 400 degrees for 60 minutes or until
tender, allow to cool then Peel potatoes.
Coarsely mash potatoes and discard skins
-
Spoon the flour in a large Dutch oven,
gradually add the milk, stirring with a
whisk until blended well.
-
Cook over medium heat for about 8 minutes
until thick and bubbly. Add the mashed
potatoe, cheese, salt and pepper, stirring
until cheese melts.

Turn the heat down to low, mix in the green
onions and sour cream, cook for 10 minutes
or until thoroughly heated.
