Healthy Potato Soup Recipe Ingredients:- 4 Large Baking Potatoes
- 2/3 cup All Purpose Flour
- 6 cups 2% Reduced Fat Milk
- 3/4 cup Reduced Fat Cheddar Cheese - divided
- Salt - to taste
- Fresh Cracked Pepper - to taste
- 1 cup Non Fat Sour Cream
- 1/2 cup Green Onions - chopped

Healthy Potato Soup Recipe Cooking Instructions:- Preheat the oven to 400 degrees.
- Pierce all the potatoes with a fork all over.
- bake at 400 degrees for 60 minutes or until tender, allow to cool then Peel potatoes. Coarsely mash potatoes and discard skins
- Spoon the flour in a large Dutch oven, gradually add the milk, stirring with a whisk until blended well.
- Cook over medium heat for about 8 minutes until thick and bubbly. Add the mashed potatoe, cheese, salt and pepper, stirring until cheese melts.
- Turn the heat down to low, mix in the green onions and sour cream, cook for 10 minutes or until thoroughly heated.
