Healthy Macaroni and Cheese Recipe Ingredients:

1½ tablespoons Butter

1/4 cup All Purpose Flour

3/4 teaspoon Dry Mustard

1/8 teaspoon Ground Red Pepper

3 cups Skim Milk
-
1¼ cups shredded Sharp Cheddar cheese,
divided

1/4 cup shredded Swiss cheese
-
1/2 teaspoon Salt
-
1/8 teaspoon Black Pepper

5 cups Cooked Elbow Macaroni

Healthy Macaroni and Cheese Recipe
Cooking Instructions:

In a large saucepan melt butter over low
heat then add in flour red pepper and
mustard, cook for 1 minute, stirring
constantly with a wire whisk.

Gradually add in the milk and stir well,
turn up to medium heat and cook for 10
minutes or until thick and bubbly, stirring
constantly all the time.

Remove from heat, add 3/4 cup cheddar cheese
and next 3 ingredients, stirring until
cheese melts.

Combine in macaroni and spoon into 2 qt.
casserole dish, sprinkle with remaining
cheddar cheese.

Cover and bake at 350 degrees for about 30
minutes.
