Healthy Macaroni and Cheese Recipe Ingredients:- 1½ tablespoons Butter
- 1/4 cup All Purpose Flour
- 3/4 teaspoon Dry Mustard
- 1/8 teaspoon Ground Red Pepper
- 3 cups Skim Milk
- 1¼ cups shredded Sharp Cheddar cheese, divided
- 1/4 cup shredded Swiss cheese
- 1/2 teaspoon Salt
- 1/8 teaspoon Black Pepper
- 5 cups Cooked Elbow Macaroni

Healthy Macaroni and Cheese Recipe Cooking Instructions:- In a large saucepan melt butter over low heat then add in flour red pepper and mustard, cook for 1 minute, stirring constantly with a wire whisk.
- Gradually add in the milk and stir well, turn up to medium heat and cook for 10 minutes or until thick and bubbly, stirring constantly all the time.
- Remove from heat, add 3/4 cup cheddar cheese and next 3 ingredients, stirring until cheese melts.
- Combine in macaroni and spoon into 2 qt. casserole dish, sprinkle with remaining cheddar cheese.
- Cover and bake at 350 degrees for about 30 minutes.
