Healthy Fruitcake Recipe Ingredients:- 1/2 Lemon - rind and juice
- 1/2 Orange - rind and juice
- 12oz Butter
- 14oz Odlums Cream Plain Flour
- 9oz Castor Sugar
- 2lb Shamrock Luxury Fruit Mix
- 1 teaspoon mixed Spice
- 6 Eggs
- pinch Salt
- Glass of Whiskey

Healthy Fruitcake Recipe Cooking Instructions:- In the lemon and orange juice soak the fruit, add rind and half of the whiskey.
- Cream butter and sugar then add eggs 1 at a time and beat very well.
- Fold in the flour, spice and salt. Add in the fruit.
- Put into a lined 9" cake tin and bake at 160°C/320°F/Gas 3 for 2-3 hours.
