Healthy Eggplant Parmesan Recipe Ingredients:- 1 Medium Eggplant - peeled, cubed
- 2 teaspoons Italian Herb Seasonings Mix
- 2 teaspoons chopped Garlic
- 1 (28oz) can diced Tomatoes
- 2 tablespoons grated Parmesan Cheese
- 1/2 cup of shredded Italian Cheeses
- Salt - to taste
- Pepper - to taste

Healthy Eggplant Parmesan Recipe Cooking Instructions:- In a skillet with a little water combine Italian seasoning and garlic, sauté until the garlic is tender.
- Add the eggplant, sauté a little longer until eggplant is tender, stir in diced tomatoes salt and pepper until heated through.
- Place into a baking dish and mix in the parmesan cheese.
- Bake at 350 for about 15 min, remove from the oven and allow to cool a few minutes before serving.
