1 Medium Eggplant - peeled, cubed

2 teaspoons Italian Herb Seasonings Mix

2 teaspoons chopped Garlic

1 (28oz) can diced Tomatoes

2 tablespoons grated Parmesan Cheese

1/2 cup of shredded Italian Cheeses

Salt
- to taste

Pepper
- to taste

Healthy Eggplant Parmesan Recipe
Cooking Instructions:

In a skillet with a little water combine
Italian seasoning and garlic, sauté until
the garlic is tender.

Add the eggplant, sauté a little longer
until eggplant is tender, stir in diced
tomatoes salt and pepper until heated
through.

Place into a baking dish and mix in the
parmesan cheese.

Bake at 350 for about 15 min, remove from
the oven and allow to cool a few minutes
before serving.
