Healthy Chicken Parmesan Recipe

Healthy Chicken Parmesan Recipe Ingredients:
  • 4 Chicken Breasts - skinless, boneless
  • Vegetable Cooking Spray
  • 1/2 teaspoon Salt
  • 2 tablespoons Light Mayonnaise
  • 1/2 cup Seasoned Dry Breadcrumbs
  • 1 Large Tomato - cut into 8 slices
  • 1 tablespoon Olive Oil
  • 1 tablespoon Dried Basil Leaves
  • 1/2 cup shredded Part Skim Mozzarella Cheese
  • 1 tablespoon grated Parmesan Cheese - for garnish

Healthy Chicken Parmesan Recipe Cooking Instructions:
  • Preheat oven to 425°F. Spray a baking sheet with cooking spray.
     
  • Season the chicken with salt and brush both sides of the chicken with mayonnaise. Place breadcrumbs on wax paper and dredge chicken through crumbs until both sides are coated.
     
  • Put chicken on baking sheet and top each with 2 tomato slices, sprinkle with oil, basil and mozzarella cheese.
     
  • Bake until chicken is cooked through (165°F) and mozzarella cheese is melted and bubbly, about 12 to 15 minutes. Garnish with Parmesan cheese.
