Healthy Chicken Enchilada Recipe Ingredients:- 4 Skinless Chicken Breast - cooked, chopped
- 1/2 cup chopped Green Pepper
- 1/2 cup chopped Red Pepper
- 1/2 cup chopped Onion
- 1 Garlic Clove - very finely chopped
- 1 tablespoon Olive Oil
- 1/4 cup All-Purpose Flour
- 1 teaspoon Chili Powder
- 1 teaspoon Ground Cumin
- 1 cup Prepared Salsa
- 1 1/4 cups Water
- 8oz Fat-Free Sour Cream
- 8 (6-8 inch) Whole-Wheat Flour Tortillas
- Vegetable Cooking Spray

Healthy Chicken Enchilada Recipe Cooking Instructions:- Preheat oven to 350.
- In a large saucepan heat oil and cook peppers, onion, and garlic until tender. Stir in flour, chili powder and cumin.
- Add in salsa and water, cook and stir until slightly thickened. Remove from heat and add sour cream.
- Combine the sauce and chicken. Spoon chicken mixture on each tortilla and roll up.
- Spray a 13x9-inch baking dish with cooking spray, arrange tortillas in dish, top with remaining sauce.
- Cover with foil and bake 25 minutes.
