1 tablespoon Olive Oil

1/4 cup All-Purpose Flour

1 teaspoon Chili Powder

1 teaspoon Ground Cumin

1 cup Prepared Salsa

1 1/4 cups Water
-
8oz Fat-Free Sour Cream

8 (6-8 inch) Whole-Wheat Flour Tortillas

Healthy Chicken Enchilada Recipe
Cooking Instructions:

Preheat oven to 350.

In a large saucepan heat oil and cook
peppers, onion, and garlic until
tender. Stir in flour, chili powder and
cumin.

Add in salsa and water, cook and stir until
slightly thickened. Remove from heat and add
sour cream.

Combine the sauce and chicken. Spoon chicken
mixture on each tortilla and roll up.

Spray a 13x9-inch baking dish with cooking
spray, arrange tortillas in dish, top with
remaining sauce.

Cover with foil and bake 25 minutes.
