Healthy Blueberry Muffin Recipe Ingredients:- 1/2 cup buttermilk
- 2 Large Egg Whites
- 3/4 cup Pineapple-Orange Concentrate
- 1 cup Whole Wheat Flour
- 1½ cup Quick Cooking Rolled Oats
- 2 teaspoons Baking Powder
- 1/2 teaspoon Baking Soda
- 1 teaspoon Vanilla
- 1 cup Unsweetened Blueberries
- Pam Cooking Spray

Healthy Blueberry Muffin Recipe Cooking Instructions:- Combine buttermilk, egg whites, juice concentrate, and vanilla.
- In separate bowl, combine baking powder, flour, oats and baking soda.
- Add liquid mixture to dry ingredients and blend until just moistened. Pour into non-stick vegetable coated tins.
- Bake in Pam sprayed muffin pans at 425 degrees for 15 - 20 minutes.
